Lemon Orzo Chicken Bake
An easy one-tray oven bake that is perfect for busy weeknights.

As I mentioned last week, I love anything lemony at the moment. I’m making the most of all the delicious lemons around and bringing you another fresh recipe.
I really enjoy a good tray bake, A.K.A. something you can throw in the oven and mostly forget about while you smash out the bath, book, bed routine (or veg out in front of the tv haha). The great thing about this recipe is you can toss everything in with no particular order. It’s also easy to adapt, so feel free to add asparagus or peas if they’re in season.
I’ve included a quick sear of the chicken thighs at the start, and I highly recommend not skipping this step. It adds a lot of flavour with very little time.
Orzo, also known as risoni, is available at most supermarkets or grocers. I’ve used bone broth in this recipe to bring extra flavour, along with important nutrients like collagen, minerals, and amino acids that support gut health and boost the immune system.
